Mojca Trnovec (Gostilna Mihovec)

Homemade, richly topped, and golden-baked flatbreads are an indispensable part of family feasts at Mihovec Inn, regardless of the day or occasion. Mrs. Mojca, the head chef of the inn, shared one of the recipes with us, which we can now try ourselves, for that "homemade with a twist" gathering at home.

INGREDIENTS

For the dough:

  • 0.5 liters of lukewarm water
  • Pinch of salt
  • Yeast starter (can also use sourdough)
  • 650 g mixture of wheat and hemp flour
  • Handful of hemp seeds

For the filling:

  • 350 g roasted pork cracklings
  • Teaspoon of cumin seeds
  • 150 g onions
  • Fleur de sel
  • 1 egg

For topping:

  • Calendula blossoms or fresh herbs of your choice

PREPARATION METHOD

Prepare the dough by mixing lukewarm water with a pinch of salt and yeast starter (or sourdough). Add the mixture of wheat and hemp flour along with a handful of hemp seeds.

After the first rising, knead the dough again and divide it into desired bread rolls, then shape them into flatbreads.

Sprinkle the top with roasted and well-drained pork cracklings, cumin seeds, chopped onions, and fleur de sel. Brush with egg and bake at 180°C for 20 to 30 minutes.

Once the flatbreads are baked, sprinkle them with calendula blossoms or herbs of your choice.
