The knowledge of making Carniolan sausages originates from the centuries-old tradition of the winter pig slaughter known as 'koline', which was our ancestors' biggest and most important non-religious holiday of the year. The sausage, made to a special recipe dating back to the early 19th century, was named 'Carniolan' after the Austro-Hungarian province of Carniola, which comprised a large part of the present Slovenia.
